Vannan's Peach Cobbler.

Crust:

2 Cups of flour
1/3 cup of sugar
1/3 cup brown sugar
1 tsp of baking powder
2 tsp of cinnamon
3 tbsp of butter
1/2 cup of liquid ( I normally freeze my own peaches then drain off the juice and use that, but water is OK too.)


Preheat oven to 350. Then grease and flour a 9 by 5 pan.
Mix dry ingredients together then add the wet. The crust should be grainy and moist but not sticky. Put 2/3 of mixture into the bottom of the pan evenly. Then put it in the oven for 5 min.

Filling:

4 cups of peaches
1/3 cup sugar
1/3 cup brown sugar
2 tsp cinnamon
1/4 cup of coconut
1 tsp of flax seed powder

Mix all ingredients together. Pour evenly the pan over the bottom crust. Sprinkle remaining 1/3 of crust on top. Sprinkle cinnamon on top. Then place in the oven for 30 min.

Enjoy, best hot with a scoop of Ice cream.
